Recipe, Old Country Bannock


           Old Country Bannock
                        An original Scottish Bannock

                   1 cup                   wheat flour
                   1 cup                         barley flour          
                                                              OR
                   1 cup                   wheat flour
                   1 cup                    oatmeal
                   1/2tsp.                  salt
                   3-4 tsp.                 baking powder
                   2-3 Tbsp.              brown sugar (optional)
                   2 Tbsp.                  cold butter
                   3/4-7/8                 cups   water
          Mix dry ingredients well. Cut in butter, breaking into very fine particles-these ingredients may be combined ahead of time, stored, and used as a mix. Add water to make soft dough. Do not knead dough. Bake in a greased skillet, browning on both sides and taking care not to burn.
